Acid-beets were a type of vegetable that was native to the planet Vjun. They were served alongside Crêpes Malreaux on their homeworld and as part of acid-beet salad in Dex's Diner on the planet Coruscant.

Acid-beets were a species of root vegetable from the planet Vjun that were grown in the acid rain that fell on their homeworld.[1] The beets could be eaten by members of the Besalisk species.[2]

History[edit | edit source]

Acid-beets were used as ingredients in a side dish customarily served with Crêpes Malreaux, a dish invented by the FIII Footman droid Fidelis for the Ninth count Malreaux, one of the many members of House Malreaux who owned the droid.[3] In 19 BBY,[4] Fidelis made the Crêpes for the Jedi Whie Malreaux and Tallisibeth Enwandung-Esterhazy on board the B-7 light freighter Nighthawk, though he lacked acid-beets to make the side dish he would normally serve and was unsure if they were even still exported from Vjun.[3] A dish called acid-beet salad was served on the planet Coruscant in Dex's Diner for 3.5 credits[5] until the diner's destruction during the first two years of the Galactic Empire's rule.[6] The Besalisk owner of the establishment, Dexter Jettster, considered the meal delicious.[5]

Behind the scenes[edit | edit source]

Acid-beets were first mentioned in Yoda: Dark Rendezvous, a 2004 novel that was written by Sean Stewart. After receiving an entry in the 2008 The Complete Star Wars Encyclopedia, the next year the beets were mentioned again in the StarWars.com Hyperspace exclusive article Dining at Dex's, which was written by Gregory Walker in the style of an in-universe menu for Dex's Diner.
